So many people get stuck in a rut when it comes to lunch. You eat the same old soggy wholemeal sandwiches and packet of crisps for days on end. I am a victim of this. I once ate tinned tomato soup every day for a week at uni, followed by four days straight of peanut butter bagels. But these depressing experiences can now be consigned to the past with our array of quick and easy lunch recipes.
